So yeah. I screwed up this recipe for Watermelon Gazpacho and accidentally skipped the last step which was to puree the ingredients in a blender. So what I really served my family was more of a watermelon salsa. Which was tasty besides my fail of direction following. I actually think keeping it chunky was a better idea instead of having this weird slushy running all over the rest of our meal.
Anyway, without further nonsense, I give you:
Watermelon NotGazpacho Salsa
1 mini seedless watermelon, cubed
3 cucumbers, cubed
1 bell pepper, chopped
1 minced shallot
3 limes, juiced and zested
1/2 bunch mint, finely chopped
Do not blend, because that would be the RIGHT directions and we’re going with the WRONG ones.
Mix everything together and chill for 1 hour before serving.
Eat. (With fork or something else. Top on chicken. Or in a taco. Or even maybe some plain yogurt. Be creative.)
