Rocky Road Cookie Recipe

So I made these cookies from a basic chocolate chip cookie recipe, but fancied it up a bit because Hubby had mentioned he was in the mood for some rocky road ice cream. I’ve been told these are badass.

Hubby’s Rocky Road Cookies

Ingredients:

2 1/4 cups all-purpose flour

1 tsp. baking soda

1 tsp. salt

1 cup butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 tsp. vanilla extract

2 large eggs

5 oz. semi-sweet chocolate chunks

1/2 cup chopped almonds

1 cup mini marshmallows

Directions:

Preheat oven to 375 degrees.

Combine flour, baking soda and salt in one bowl.

Combine butter, both sugars and vanilla extract in another bowl until creamy. Add eggs and then flour mixture. Stir in chunks, almonds and marshmallows.

Drop by rounded tablespoons onto greased baking sheets. (Marshmallows stick!)

Bake 8-10 minutes, until the bottoms are JUST lightly brown. Cool for ten minutes.

Dunk in milk (optional).
